Onions are a brilliantly versatile vegetable and one of the few that taste good all year round. So often hidden within a dish, this is a great month to make them the star. Some of our favourites include caramelised onion and goat cheese pasta, onion tart and sausage stuffed onions.
Try:
French onion soup with a rich beef stock and red Leicester croutons. Pairs perfectly with an English white wine such as Pinot Gris or Chardonnay. For something unusual try Missing Gate Sauvignon Blanc from Essex.

Jerusalem Artichokes – The Perfect Vegetable To Eat Seasonally In February.
These underrated little tubers are in season October to March and well worth adding to you list of winter seasonal veg. They are excellent mashed, deep fried, sauteed and made into a soup.
Try:
One of our best winter canapes is deep fried ribbons of Jerusalem artichoke topped with English brie and vineyard honey. Beautiful with a glass of English Blanc de Blancs, such as Raimes from Hampshire.

Apples For A Sweet Treat In February
Apples are one of the few English fruits that you can buy in February. They won’t be new season, and as such will lack a bit of the freshness and crispness you find in autumn. However, all is not lost. This is a great month to stew or amp up English apples with sugar and spice.
Try:
Apple tart with a rich buttery crust. Delicious with a glass of English fizz to round off the evening. We love this dessert paired with an older vintage English Sparkling Wine, such as Terlingham Blanc de Blancs.
