February is all about fish and there is world class produce in our waters. Pan-fry in butter or winter bbq to create dishes made from world class ingredients.
Seasonal British produce in February is all about fish. And it is no exaggeration to say this is a great month to enjoy world class ingredients on our own doorstep. Dover sole and scallops are favoured by chefs and found in the best restaurants. And as they are in season in UK waters in February, this is a great time to order them. Rye, in East Sussex, even hosts a week long scallop festival to celebrate this delicate little shell fish. Winter is also a great month for oysters. Pair with a bottle of your favourite English Sparkling Wine for a Valentine’s Day treat.
Vegetables in February, much as January, fall into two main types. The roots such as potatoes, parsnips, carrots and swedes. And those from the brassica family such as sprouts, kale and cauliflower. Luckily these available, versatile vegetables can prepped a hundred different ways. Nothing quite beats cauliflower cheese and a glass of English Pinot for a winter week day supper.
Fruit is tough to find in February. Look out for British grown apples in big supermarkets. However, they won’t be new season so this is the perfect excuse to cook them with lots of sugar and butter. Mini apple crumble with milk ice cream is a British delicious favourite. It’s guaranteed to lift your spirits this month.
Pinot Noir from England can vary in style depending on the producer, vintage and region. But most will have earthy undertones that pair well with seasonal ingredients.
Whether your preferred style is crisp and fresh or rich and oaky, February is great month for pairing English seasonal food with English Chardonnay. These fish dishes work brilliantly with either style of wine.
It’s cod season and for the ultimate British delicious experience pair locally caught cod and English Sparkling Wine. For a left-field pairing try grilled sardines and sparkling rosé.
February is an excellent month for British seasonal produce if you like fish. It will vary by region and is always weather dependent, but this is the time for classic delicacies. Dover sole and scallops are often associated with French cuisine, and they make also make excellent British delicioius dishes. February is a great month to enjoy them at their freshest. If you prefer a leaner dish, try a winter BBQ of sea bream fillets.
When it comes to meat, there is not much specifically seasonal British meat in February. Game season is now over (until it returns again in late summer) and it’s a little while yet until the first of spring lamb is readily available.
But good news. Excellent quality British chicken, beef and pork are easily found in supermarkets all year round. And February is surely the month for British classic bangers and mash. You can also pick up rabbit and farmed venison from most butchers any time of the year.
